Caesar Salad


NAME
Caesar Salad comprises romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil, and black pepper, originally prepared tableside. Many variations include fresh tomatoes and grilled chicken fillet.

SYNOPSIS
Portion: 2 Persons
- 1 large head romaine lettuce
- 2 big tomatoes
- 2 chopped boneless chicken breasts
- olive oil
- French or Italian bread
- Fresh lemon juice
- 1 teaspoon fresh ground black pepper
- 1 teaspoon coarse ground salt
- Grated Parmesan cheese

DESCRIPTION
Trim the romaine lettuce of bruised or browned leaves, then cut into 1 1/2 inch pieces. Wash and drain the lettuce, pat it dry and refrigerate for 30 minutes to crisp the leaves.

Cook chicken breasts until they are tender and chop into bite size pieces.
To make the croutons, cut the bread into cubes, heat the olive oil in a sauté pan over medium-high heat. Fry the bread cubes in the oil, tossing frequently, until they're crisp and golden.
Cut tomatoes in cubes and add to the bowl. Now add the lettuce, croutons, chicken breast, lemon juice, black pepper, olive oil, Parmesan cheese and salt, and blend well.

OPTIONS
Serve directly from the salad bowl!

Galinhada


Galinhada
Galinhada is a Brazilian recipe for rice with chicken cooked in the same pot, from the regions of Goiás and Minas Gerais.

SYNOPSIS
Portion: 4 persons
- 2 cups of white rice;
- 4 cups of water;
- 400g of chicken meat (small pieces);
- 1 big Onion (chopped in small pieces);
- 3 garlic tooth (smashed);
- 1/2 can of sweet corn;
- 1/2 can of green peas;
- Olive Oil
- Salt, Pepper

DESCRIPTION
Fry the onion and garlic in the olive oil till it gets golden, then add the rice to fry for 1 minute. Add the chicken meat pieces, salt and pepper and cook it. Add the corn and peas for a small cooking time, and add the 4 cups of water and close the lid.
Stir it a little once in a while, and after 10 minutes cooking, the rice should be soft and not so wet.

OPTIONS
Serve it hot, with beans and green tomato salad.
