Cornmeal Cake - Bolo de Fubá


Corn Cake
Cornmeal Cake (Bolo de Fubá in Portuguese), a very rustic and traditional cake which consists of a mixture of cornmeal and wheat flour.

SYNOPSIS
Portion: 8 pieces
- 3 eggs;
- 1 cup of sugar;
- 2 spoons of butter;
- 1 cup of milk;
- 1 cup of flour;
- 1 cup of cornmeal (polenta);
- 1 spoon of baking soda;

DESCRIPTION
Warm up the oven to 180°c and prepare a round baking pan. Whip the egg whites and slowly add sugar, butter, milk, flour, cornmeal and baking soda, blending it well to get an even mixture. Bake it at 180°c for 30 minutes or until it's dry.

OPTIONS
Serve it plain and hot from the oven, or let it cool down before serving.

Carrot Cake - Bolo de Cenoura


Carrot Cake
Carrot Cake (Bolo de Cenoura in Portuguese), cake which consists of grated carrot mixed with batter. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. The carrots themselves enhance the flavor, texture and appearance of the cake.

SYNOPSIS
Portion: 8 pieces
- 1/2 cup of sunflower oil (or any cooking oil);
- 1/2 cup of milk;
- 3 carrots (medium) grated;
- 3 eggs;
- 1 1/2 cups of sugar;
- 2 1/2 cups of flour;
- 1 tablespoon of baking soda;

DESCRIPTION
Warm up the oven to 180°c and prepare the baking pan. Mix all the wet ingredients (carrots, eggs, oil and sugar) together with a blender for 5 minutes. Add the dry ingredients and mix it till it gets a even mixture. Bake it at 180°c for 30 minutes or until it's dry.

OPTIONS
Serve it plain and hot from the oven, or add a chocolate topping and let it cool down before serving.

Chocolate Cake


NAME
Chocolate Cake A simple sponge cake, that goes well with tea, hot chocolate or coffee. You can change the chocolate flavor for vanilla or fruit aroma.

SYNOPSIS
12 Portion:
- 4 eggs;
- 2 cups of sugar;
- 2 cups of flour;
- 6 tablespoons of cacao;
- 3 tablespoons of butter;
- 1 cup of milk;
- 4 teaspoons of baking soda;

DESCRIPTION
Start heating the oven, while whip the egg white till foam. Then add slowly and always mixing: sugar, egg yolk, butter, milk, flour, chocolate and baking soda. Mix for 1 minute, and let it rest. Grease an cake tin with a butter or margarine, add the contents and bake for at least 30 minutes.


OPTIONS
You can use condensed milk, whipped cream or chocolate cream as a topping.

Galinhada


Galinhada
Galinhada is a Brazilian recipe for rice with chicken cooked in the same pot, from the regions of Goiás and Minas Gerais.

SYNOPSIS
Portion: 4 persons
- 2 cups of white rice;
- 4 cups of water;
- 400g of chicken meat (small pieces);
- 1 big Onion (chopped in small pieces);
- 3 garlic tooth (smashed);
- 1/2 can of sweet corn;
- 1/2 can of green peas;
- Olive Oil
- Salt, Pepper

DESCRIPTION
Fry the onion and garlic in the olive oil till it gets golden, then add the rice to fry for 1 minute. Add the chicken meat pieces, salt and pepper and cook it. Add the corn and peas for a small cooking time, and add the 4 cups of water and close the lid.
Stir it a little once in a while, and after 10 minutes cooking, the rice should be soft and not so wet.

OPTIONS
Serve it hot, with beans and green tomato salad.
