Cornmeal Cake - Bolo de Fubá
Corn Cake
Cornmeal Cake (Bolo de Fubá in Portuguese), a very rustic and traditional cake which consists of a mixture of cornmeal and wheat flour.
SYNOPSIS
Portion: 8 pieces
- 3 eggs;
- 1 cup of sugar;
- 2 spoons of butter;
- 1 cup of milk;
- 1 cup of flour;
- 1 cup of cornmeal (polenta);
- 1 spoon of baking soda;
DESCRIPTION
Warm up the oven to 180°c and prepare a round baking pan. Whip the egg whites and slowly add sugar, butter, milk, flour, cornmeal and baking soda, blending it well to get an even mixture. Bake it at 180°c for 30 minutes or until it's dry.
OPTIONS
Serve it plain and hot from the oven, or let it cool down before serving.

Carrot Cake - Bolo de Cenoura
Carrot Cake
Carrot Cake (Bolo de Cenoura in Portuguese), cake which consists of grated carrot mixed with batter. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. The carrots themselves enhance the flavor, texture and appearance of the cake.
SYNOPSIS
Portion: 8 pieces
- 1/2 cup of sunflower oil (or any cooking oil);
- 1/2 cup of milk;
- 3 carrots (medium) grated;
- 3 eggs;
- 1 1/2 cups of sugar;
- 2 1/2 cups of flour;
- 1 tablespoon of baking soda;
DESCRIPTION
Warm up the oven to 180°c and prepare the baking pan. Mix all the wet ingredients (carrots, eggs, oil and sugar) together with a blender for 5 minutes. Add the dry ingredients and mix it till it gets a even mixture. Bake it at 180°c for 30 minutes or until it's dry.
OPTIONS
Serve it plain and hot from the oven, or add a chocolate topping and let it cool down before serving.

White Sauce
NAME
White Sauce is the most basic sauce, from which numerous other sauces stem. Béchamel is the king of white sauces, differing slightly from the basic white sauce in that the milk is flavoured first with onion and seasoning (often nutmeg).
SYNOPSIS
Portion:
- 2 tablespoons of butter
- 2 tablespoons of flour
- 2 cups of milk
- Garlic
- Onions
- Nutmeg
- Black pepper
- Salt
DESCRIPTION
In a hot pan, melt the butter, add the flour slowly and mixing until is smooth and thick. Then add slowly the milk, always mixing, till you get the desired consistency.
Add salt, pepper and a little of nutmeg.
OPTIONS
You can add also some small chopped fried garlic, onion and bacon, that will increase the flavor. Goes very well with pasta.

Tortilla de Patatas
NAME
Tortilla de Patatas or Spanish omelette is a typical Spanish dish consisting of an egg omelette with fried potatoes.
SYNOPSIS
Portion: 1 Tortilla (4 persons)
- 4 medium Potatoes
- 4 Eggs
- 1 big Onion
- Olive Oil
- Salt, Pepper
DESCRIPTION
Fry the sliced potatoes and onions in abundant olive oil, till they get soft and golden. Drained the oil and mix the potatoes and onions with raw beaten eggs, and slowly fry the mix in a frying pan. The tortilla is fried first on one side and then flipped over to fry on its other side, with the help of a plate.
OPTIONS
Eat it hot from the oven with tomato salad

Blini
NAME
Blini (Russian блины) - its a kind of pancake, easy to do and very tasty. Goes well with natural fruit jam, honey, and condensed milk.
SYNOPSIS
For 20 portions:
- 2 eggs
- 10 g white sugar
- 2 g salt
- 60 g all-purpose flour
- 590 ml milk
- 15 ml vegetable oil
- 15 g butter
DESCRIPTION
In a medium bowl, whisk together the eggs, sugar, and salt. Sift the flour into the bowl, and stir in along with the milk. Mix until smooth and well blended. The batter should be thin.
Heat a griddle or skillet over medium heat. Lightly oil the pan or spray with cooking spray. Pour about 2 tablespoons of the batter, or as much as desired, into the pan. Tilt the pan to spread the batter out evenly. When the edges are crisp looking and the center appears dry, slide a spatula carefully under the blin. Flip, and cook for about 1 minute on the other side, or until lightly browned.
Remove blini to a plate. Put a little butter on top, and continue to stack the blini on top of each other. To serve, spread with desired filling, then fold in half, and in half again to form a triangle. Mmm Mmm!
OPTIONS
For coverage, use jam, or something :D
